Bonjour,
Dans cette phrase posté sur Twitter :
"Now I believe everything Francis said about you."
C'est un problème car en français je la traduirai par " Maintenant je crois tout ce que Francis disait "ou" a dit à propos ton sujet."
Or, pourquoi en anglais le terme "que" ou "ce que" n'est pas utilisé en l'occurrence ici ou concernant d'autres cas alors qu'ils existent en anglais "that..."

la phrase "Now I believe everything Francis said about you." n'est pas correcte en effet car le mot 'everything' doit être suivi de 'that'.

Le pronom relatif "that" sera obligatoirement utilisé après certains mots comme :
-> everything, anything, nothing
-> only, all
-> les superlatifs

Hello, there is no rule that says "that" must be used after "everything".
"Now I believe everything Francis said" is correct (albeit informal).
"That" (or some other word) must be used if it replaces a subject, for example: "Now I know everyone that/who lives here."
However, if "that" (or a similar word) is followed by some form of "to be", they both can often be omitted together:
"Give this book to the man (that/who is) sitting on the bench."
