There are no bars open/open bars

Hello,
I just want to say that they are all closed and therefore, you can't drink and I suppose the answer is "there is no bars open" otherwise in the other way, it would mean drinks are free! But I can't explain why open is an adjective and why wouldn't it go before its noun??
Can you help me please?

Ce serait quand même mieux au pluriel !
There are no bars open. Open est pris comme un adjectif.
open adj (area behind doors) (lieu) ouvert adj
The theatre was open for anybody to enter.
Le théâtre était ouvert à tous.
Open bar au sens de boissons gratuites ne serait pas au pluriel, je pense. There's no "open bar" period in this pub.
